Currently, the balls are bugged with fusion and sometimes revert the pokempns ability to it's non hidden one. From what I've read, putting Azu as the head as planned would get me the 100 base Atk stat I want, but force me to have Intimidate from Gyarados. What you can try is, instead, unfuse your pokemon, refuse it in a different order so you can select the ability you want, and then reverse the fusion.
